An international clientele has recognized Anneliese
Schwarzmann for her Franconian specialties which she professionally prepares
according to original recipes listed in a
149-year-old cookbook* of the “Zur Stadt Mainz” restaurant. Würzburg
citizens as well as guests from all over the world enjoy traditional Franconian
meals, such as the so-called “Kärrner Braten”, a beef roast filled
with parsley, white bread, onions, eggs and bratwurst stuffing. One of
her specialties is a delicious ox breast which is crispy outside
and juicy inside. Guests who consider these favorite meals of our
ancestors too heavy, will certainly enjoy one of the many dishes with fresh
fish from the Main River. Further highlights of Anneliese Schwarzmann’s
cuisine are wild game dishes and goose roast which are predominantly served
in the fall. Several types of Bavarian beer, such as the Aecht Schlenkerla,
a typical Franconian smoked beer, as well as excellent Franconian wines
are a wonderful accompaniment with the delicious meals. The City of Würzburg
and its surrounding area are famous for the best Franconian wines, many
bottles of which are stored in the wine cellar of the “Zur Stadt Mainz”
restaurant.
